Key responsibilities will include:

Cooking and preparing various menus from Lunch to Evening dining;
Developing menus, calculating expenses for both food and labor and procuring necessary food supplies
Adhering to recipes and procedures;
Supervising the quality of dishes throughout every phase of preparation and presentation
Discussing formal preparation issues with Managers, Dieticians and Kitchen & Waiting staff;
Illustrating methods and offering guidance on cooking procedures
Selecting and training staff;
Maintaining restaurant plating and cooking standards; and

Required skills and attributes:

The Role

The position is fulltime for an annual salary between $73,500 to $80,000 plus superannuation, depending on experience.





The Responsibilities

Designing and updating menus to incorporate seasonal ingredients, customer preferences, and current food trends.

Collaborate with the kitchen team to develop and execute exciting menus

Preparing, cooking, and presenting dishes according to the restaurant's standards, ensuring consistency in taste, appearance, and quality.

Ordering ingredients and supplies, managing stock levels, and controlling waste to ensure the kitchen operates efficiently.

Managing kitchen staff, assigning tasks, and ensuring they follow proper cooking techniques and hygiene standards.

Ensuring all dishes meet the restaurant's quality and safety standards, including taste, presentation, and portion sizes.

The Requirements:

Certificate IV in Commercial Cookery or similar

At least 2 years of relevant experience in a professional kitchen

At least 2 years experience in leading a commercial kitchen

At least 2 years of menu planning experience and recipe costing

Expertise in working with seafood, steaks, and other high-quality proteins

Proficiency in the sauté pan, grill & fryer section

Experience in high volume kitchens and functions

Excellent hygiene and food handling standards

Strong stock control and ordering capabilities

As a Receiving Clerk, you’ll be essential in receiving schedules for dry, frozen, or perishable products. You’ll assign loads to doors, balances, purchase orders, and process freight handling, billing, and payments.

The Accounting Generalist performs day to day accounting activities, reporting and issue

resolution between operations and the shared service operations. The position is responsible for reviewing and analyzing financial reports and transactions as appropriate. This position ensures that operations are in compliance with all internal control procedures. Additional responsibilities include preparing reports, cashier activities, taking inventories, receiving & accounting as defined in the procedures.

Essential Functions and Responsibilities

• Perform ad hoc accounting activities in support of operations and Financial Director
• Banking and auditing the cash boxes (front desk, bar, restaurants, etc.), daily deposit to bank, and petty cash
• Organize and distribute paychecks as directed
• Attend precon meetings and client billing review

• Coordinate sales processes and customer relations for DOSM and other managers as required
• Answer telephones within Loews Star Service guidelines. Never answer with "hold please". Always allow caller to speak first, if necessary to put him/her on hold.

• When receiving a lead, ask for all pertinent information. Use client's last name during conversation. Give client name of sales manager that will be returning phone call. Always thank the caller for calling
• Set-up and maintain files in a neat and orderly manner adhering to the prescribed format (i.e. Left side: contract; Right side: booking recap, original notes or inquiry form, parking memo, detailed reservation listing, rooming list and changes to list, correspondence, amenity requests, credit information on bottom)
• Assist with return phone calls. Help clients with details on upcoming groups.  Make every effort to resolve requests on the first call.
• Make reservations and take care of amenities for Managers.  Follow-up by double-checking all VIP reservations and amenities. Call the Reservations Department and have the VIP rooms pre-assigned. Call Room Service to see that they have amenity request. Notify Manager of room assignment and status of amenity 
• Ensure that personal note accompanies all amenities
• Assist with special project tasks, including mailings, sales blitz lists and other sales related activities
• Prepare contracts for Sales Managers; merge, alter and distribute for a tentative booking
• Assemble proposals and regret correspondence for Sales Managers
• Create reader files for Sales Managers and prepare them for monthly review by the Director of Sales
• Produce V.I.P reservations for the Reservations Department, and follow up to ensure the guest will be accommodated upon arrival
• Assist in training new Sales Assistants on how the Sales Department and the hotel operate to accommodate clients/guest and their daily responsibilities to the Sales Manager
