Full-time Senior Chef Position
Salary: $ 80,000 - $90,000 + Super
Smoque Brasserie Restaurant in Chatswood is looking for an Senior Level Chef.
Smoque Brasserie is now urgently looking for an Senior Level Chef to join our team.
Duties and Responsibilities:
• Determine how food should be presented, and create decorative food displays
• Determine production schedules & staff requirements necessary to ensure the delivery of services
• Estimate amounts and costs of required supplies, such as food and ingredients
• Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers
• Supervise and instruct cooks and other workers in the preparation, cooking, garnishing and presentation to meet our high standards.
• Inspect supplies, equipment, and work areas to ensure conformance to established standards
• Stock management, including ordering, rotation, and wastage control; arranging the purchasing and pricing of goods according to budget and ensuring that all food purchased
• Full knowledge of all operations, interview, hire and train any further kitchen staff members and ensure that they have experience with food preparation
• Responsibility for managing the cost of goods and wage targets
• Rostering and shift management
• Full knowledge of all operations, OH&S, HACCP and management of the Food Safety Program
• Monitor sanitation practices to ensure that employees follow standards and regulations
A successful candidate will need to have: -
• Minimum Cert IV Commercial Cookery or other relevant qualification
• At least 2 years relevant experience in a similar role
• Excellent communication skills to interact with other team members.
• Ability to work in a fast-paced environment with multifaceted kitchen operations
• Experience in designing and implementing Indian menus ranging from casual dining to more sophisticated food;
• An understanding of food costings and business management
• A positive and professional demeanour
• Current Food Safety Supervisor Certificate
Working hours: 38 hours per week
